2.5 dl cream
200 gr fresh skyr from Erpsstadir (alternatively use mascarpone cheese)
1 teaspoon vanilla powder
3 tablespoon sugar
Whip the cream together with sugar and vanilla powder. When the cream starts to thicken up, add skyr (or cheese). Continue to beat the cream until it forms a stiff peak
2 dl Íslandus
1 tablespoon sugar
3 tablespoon crowberries (fresh or frozen)
Put together in a small pan and let it boil for 10 – 12 minutes. Stir once in a while. To obtain the juice from the berries crush them with a wooden spoon. Cool the syrup.
400 g Icelandic strawberries
Cut the strawberries into small pieces and marinate in the syrup for í 10 – 15 minutes. Make several layers with creamy skyr and berries in syrup. Add berries and roasted almond flakes on top.
